Job Summary

The Sous Chef – Indian Cuisine plays a critical role in the pre-opening phase of the hotel, supporting the Executive Chef in setting up kitchen operations, menu development, and ensuring exceptional culinary standards. The role involves leading the Indian kitchen section, delivering authentic and innovative dishes, and maintaining the highest standards of food quality, hygiene, and guest satisfaction in line with Vivanta by Taj standards.


Key Responsibilities

  • Assist in pre-opening activities including kitchen setup, equipment planning, and SOP development
  • Design and develop Indian cuisine menus (regional, contemporary, and specialty dishes)
  • Supervise daily kitchen operations and ensure consistency in food preparation and presentation
  • Train, mentor, and lead the Indian kitchen team
  • Ensure adherence to food safety, hygiene, and sanitation standards (HACCP compliance)
  • Monitor food cost, wastage control, and inventory management
  • Maintain high standards of taste, quality, and portion control
  • Collaborate with F&B and service teams for smooth kitchen operations
  • Handle guest feedback and ensure a memorable dining experience
  • Stay updated with culinary trends and introduce innovative dishes

Required Skills & Competencies

  • Strong expertise in Indian cuisine (North Indian, regional, and modern Indian)
  • Leadership and team management skills
  • Creativity and passion for culinary excellence
  • Strong knowledge of kitchen operations, hygiene, and safety standards
  • Ability to work under pressure in a fast-paced environment
  • Good communication and interpersonal skills
  • Attention to detail and presentation

Qualifications & Experience

  • Diploma/Degree in Hotel Management or Culinary Arts
  • 5–8 years of experience in a reputed hotel or restaurant
  • Minimum 2–3 years of experience as Chef de Partie or Junior Sous Chef in Indian cuisine
  • Pre-opening experience is highly preferred

Working Conditions

  • Rotational shifts including weekends and holidays
