Overview

The Demi Chef de Partie – Bakery is responsible for assisting in the preparation, production, and presentation of bakery products while maintaining the highest standards of quality, hygiene, and consistency. The role supports the Bakery and Pastry team in daily operations, ensuring guest satisfaction and adherence to hotel standards.

Key Responsibilities

  • Prepare and bake a variety of breads, rolls, croissants, Danish pastries, muffins, cookies, and other bakery items according to standardized recipes.
  • Assist the Chef de Partie in daily bakery operations and production planning.
  • Ensure all bakery products meet quality, taste, presentation, and portion standards.
  • Monitor ingredient quality and maintain proper storage procedures.
  • Maintain cleanliness and organization of bakery workstations, equipment, and storage areas.
  • Follow HACCP, food safety, and hygiene regulations at all times.
  • Support banquet, buffet, restaurant, and room service bakery requirements.
  • Assist in inventory management, stock rotation, and minimizing food wastage.
  • Ensure timely preparation and delivery of bakery products as per operational requirements.
  • Participate in developing new bakery items and seasonal offerings.
  • Train and support Commis Chefs and kitchen associates when required.
  • Report equipment maintenance issues and operational concerns to supervisors.

Requirements

  • Diploma or Degree in Hotel Management, Culinary Arts, Baking & Pastry, or a related field.
  • Minimum 2–4 years of experience in bakery operations within a luxury hotel, resort, fine dining establishment, or premium bakery.
  • Strong knowledge of bread making, dough preparation, fermentation, baking techniques, and bakery production.
  • Understanding of food safety, hygiene, and HACCP standards.
  • Ability to work efficiently in a fast-paced environment.
  • Strong organizational and time-management skills.
  • Excellent teamwork and communication abilities.
  • Flexibility to work shifts, weekends, and public holidays.

Preferred Skills

  • Experience with artisan breads, sourdough, laminated doughs, and specialty bakery products.
  • Knowledge of modern bakery equipment and production techniques.
  • Attention to detail and commitment to quality.
  • Creativity and passion for bakery innovation.
